Super-easy carrot and lentil soup

If you enjoy a hearty, inexpensive soup, you’ll love this mouth-watering recipe.  Loaded with veggies, this carrot and lentil soup takes very little time to prepare and tastes delicious.

It’s also a great immune booster with plenty of vitamin C and ginger. Ginger is known for its healing properties and is great for relieving motion sickness, loss of appetite, nausea and pain.  Store any leftovers in an airtight container in the fridge and reheat before serving. Top with natural yogurt, chilli flakes, grab some bread and dig in! 

Ingredients

  • 1 tbsp vegetable oil
  • 1 large brown onion, chopped
  • 2 garlic cloves, chopped
  • 2 tsp fresh ginger, finely chopped
  • 2 tsp ground allspice
  • 1kg carrots, grated
  • 1 cup red lentils
  • 4 cups salt-reduced chicken stock

Method

  1. Heat oil in large saucepan over medium heat. 
  2. Add onion, garlic and ginger. Cook for five minutes. 
  3. Add allspice and carrot. Cook for one minute or until well combined. 
  4. Add lentils, stock and two cups of water.
  5. Cover. Bring to boil and cook for 10 minutes. 
  6. Use a stick blender to carefully blend lentil mixture until smooth.
