This has to be one of the easiest pea soup recipes around. It takes just 20 minutes to cook and only uses five ingredients – what more could you want? The super creamy and smooth texture of this meal will be a hit with the whole family.

For an even healthier option, ditch the second half of the cream and just top the soup with chives!
1 brown onion, finely chopped
4 cups (1L) salt-reduced chicken stock
750g frozen peas
1/2 cup (125ml) pouring cream
Finely chopped chives, to serve
Grease a large saucepan and heat over low heat. Cook onion and stir occasionally until it softens or for about 10 mins.
Add stock and increase heat to high to bring to boil. Mix in peas and cook for 2-3 mins, stirring constantly, and only just bring mixture to the boil. Remove from heat.
With a blender, blend mixture until almost smooth. Add half the cream and continue to blend. Season.
Ladle soup into serving bowls. Top with the remaining cream and chives to serve.
