This has to be one of the easiest pea soup recipes around. It takes just 20 minutes to cook and only uses five ingredients – what more could you want? The super creamy and smooth texture of this meal will be a hit with the whole family.
For an even healthier option, ditch the second half of the cream and just top the soup with chives!
Ingredients

1 brown onion, finely chopped

4 cups (1L) salt-reduced chicken stock

750g frozen peas

1/2 cup (125ml) pouring cream

Finely chopped chives, to serve
Method
- Grease a large saucepan and heat over low heat. Cook onion and stir occasionally until it softens or for about 10 mins.
- Add stock and increase heat to high to bring to boil. Mix in peas and cook for 2-3 mins, stirring constantly, and only just bring mixture to the boil. Remove from heat.

With a blender, blend mixture until almost smooth. Add half the cream and continue to blend. Season.

Ladle soup into serving bowls. Top with the remaining cream and chives to serve.
