Homemade pumpkin gnocchi

This treat puts a delightful twist on the original.

Everyone loves this tasty homemade Italian delicacy, but some people avoid cooking it because it can be quite tricky to get right. However this recipe allows you to make the most delightful version of this dinner dish with a bit of an original twist that will have everyone asking you for the recipe.

This version might still take a while to get onto the plate but with a little bit of patience it will all be worth it once you put that first piece in your mouth! Delicious!

Ingredients

  • 1 butternut pumpkin
  • 2 tbsp olive oil
  • ½ cup parmesan cheese
  • 1 tsp salt
  • Pepper to taste
  • 2 eggs
  • 2 cups flour

Method

  1. Preheat oven to 190C. Line baking tray with baking paper. Cut pumpkin in half. Drizzle oil over the top. Add salt and pepper. Lay cut side down on prepared tray. Roast in oven for 30 minutes or until soft. Leave to cool slightly.
  2. Scoop out flesh of pumpkin. Place in food processor. Pulse to puree. In a large bowl add pumpkin puree, cheese, salt, pepper and eggs. Mix together to combine. Add flour. Mix together with hands until completely smooth. Lightly flour flat surface. Turn out dough. Divide into six even pieces. Roll out each piece into long sausage shapes about 1-2cm thick. Cut strips into 1cm pieces. Use a fork to press in ridges to each piece. 
  3. Bring a large pot of salted water to boil. Add gnocchi pieces. Boil for about 5 minutes or until they are all floating. Drain water. Serve hot, mixed with sauce of choice and topped with cheese.
