Healthier walnut banana bread

This tasty recipe is definitely the healthier version of the classic afternoon tea treat. While traditional banana bread is super popular to pair with your afternoon cuppa, this might be the healthier option to opt for. Anyone who has spent the time baking their own banana bread can tell you how much better the taste of a homemade loaf is compared to the store bought versions. 

This recipe is much lower in fat and calories but still has the same delicious taste as the original. Pair it up with a cup of tea or coffee and enjoy a slice of this sweet treat!

Ingredients

  • 300g (2 cups) self-raising flour
  • 70g (1/3 cup, firmly packed) brown sugar
  • 100g walnuts, coarsely chopped
  • 1 tsp bicarbonate of soda
  • 2 eggs, lightly whisked
  • 250ml (1 cup) milk
  • 1 cup (about 2 large) mashed banana

Method

  1. Preheat oven to 180C. Line a 20 x 10cm loaf pan with baking paper. In a large bowl, sift flour. Add sugar, walnuts and bicarbonate of soda. Stir to combine.
  2. Add egg, milk and banana into mixture. Fold together gently. Spoon mixture into the prepared pan.
  3. Bake for 45 minutes or until an inserted skewer comes out clean. Set aside to cool. Remove from pan to cool completely. Slice into even pieces. Serve with butter.
