Healthy carrot and ginger soup

If you’re feeling a bit under the weather, tuck into a bowl of this delicious, warm soup. The hearty mixture of carrot, ginger and garlic not only makes for a mouthwateringly good dinner or lunch option, but it’s also filled with great vitamins that will do wonders for your body. While carrots help to lower cholesterol levels, ginger eases nausea and helps with muscle pain. This magical mixture makes for the best comfort food you’ll ever try!

Ingredients

  • 2 tablespoons olive oil
  • 1 brown onion, finely chopped
  • 5cm piece ginger, peeled, finely chopped
  • 2 garlic cloves, finely chopped
  • 6 (1kg) carrots, peeled, chopped
  • 4 cups chicken style liquid stock
  • Sour cream, to serve

Method

  1. Heat oil in saucepan over medium heat. Add onion, ginger and garlic. Reduce heat to medium-low. Cook for 8 to 10 minutes, stirring, until onion is tender.
  2. Add carrots, stock and 2 cups of water to mixture. Partially cover and leave to simmer for 35 to 40 minutes or until carrots are very soft. Remove from heat and leave to cool.
  3. Use hand blender to blend cooled soup until completely smooth. Return soup to low-heat. Stir until warmed through. Ladle into serving bowls. Top with spoonful of sour cream. Serve.
