These cakes are super crunchy on the outside with a perfect rice and salmon filling that will definitely become a favourite. These are best served up alongside a colourful garden salad that complements the mouthwatering fish flavours. As they’re packed with protein and healthy ingredients they make for an ideal, easy weeknight dinner dish to sneak vegetables into the diet of fussy eaters like the grandkids. This filling meal will definitely have everyone heading back for seconds!

Ingredients

  • 2/3 cup white long-grain rice
  • 3 x 95g cans salmon (with tomato and onion), drained
  • 1 cup fresh breadcrumbs
  • 3 eggs, lightly beaten
  • Vegetable oil, for shallow frying
  • 1/2 x 180g bag baby leaves with beetroot
  • 2 tablespoons creamy roasted garlic dressing

Method

  1. Cook rice in a large saucepan of boiling water, until tender. Drain. Leave to cool.
  2. Add salmon, rice, breadcrumbs and eggs to a large bowl. Season and mix well. Spoon 2 tablespoons of mixture and roll into a ball. Flatten slightly. Repeat with all of the mixture. Place on tray. Refrigerate for 10 minutes.
  3. Heat oil in frying pan over medium-low heat. Cook patties, in batches, for 2 to 3 minutes on each side or until golden. Serve with salad and dressing.
