Flavoursome mashed potato and bacon casserole

A great comfort food and side dish.

This delicious dinner casserole is sure to be a hit at the family dinner table no matter the season. The recipe is super-easy to make, can work as a side dish or standalone meal – it goes particularly well with lamb shanks – and is packed with flavour, combining fluffy potatoes, smooth butter, tangy sour cream, salty bacon, tasty cheese and indulgent cream. And it only takes 20 minutes to cook in the oven.

Ingredients

  • 2kg potatoes (peeled and cubed)
  • 100g butter
  • 1 cup sour cream
  • 3/4 cup cream
  • 1/2 cup milk
  • 5 slices shortcut bacon, chopped and cooked
  • 2 cups cheese

Method

  1. Bring the cubed potatoes to the boil in a large pot and cook until a fork can run through them easily.
  2. Drain the potatoes and add them back into the pot.
  3. Mash the potatoes using a potato masher, then add the butter, sour cream, cream and milk. Mix until combined.
  4. Stir in half the bacon and cheese and then spoon the mixture into a large baking dish.
  5. Evenly spread the remaining bacon and cheese over the potato to form a delicious topping.
  6. Bake the potato casserole for 20 minutes at 180°C.
  7. Serve and enjoy!
