Easy slow-cooker ginger chicken

The super-simple dinner dish!

Slow-cookers are every stressed-out cook’s saviour. While this dish tastes like something you would order in a high-end restaurant, thanks to the help of the slow-cooker, the recipe takes only 10 minutes preparation time. It is honestly one of the easiest dishes to make in the morning and enjoy as soon as you get home that night.

The only thing to add is some colour with steamed broccoli or carrots and a bed of rice to serve it on. Just ladle out the servings between plates and watch everyone fall in love with this tender chicken coated in a sweet ginger sauce!

Ingredients

  • 680g boneless skinless chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons seedless blackberry preserves
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon Sriracha sauce (available in Mexican section at supermarkets)
  • 1/4 teaspoon garlic powder
  • 2 tablespoons corn flour (mix with 2 tablespoons water to make paste)
  • 1 teaspoon toasted sesame seeds

Method

  1. Dice chicken into bite sized pieces. Add to slow cooker
  2. Add soy sauce, honey, preserves, ginger, Sriracha, garlic powder and corn flour paste to bowl. Whisk together until smooth. Pour over chicken pieces.
  3. Cover and cook on high for 3-4 hours or low for 6-8 hours.
  4. Garnish with toasted sesame seeds and vegetables. Serve.
