Easy five-ingredient zucchini soup

The best dish for a cold night!

This is one of the best dishes to whip up on a cold night when you really don’t feel like being stuck in the kitchen all night. This delicious and creamy dish is packed full of good stuff and super low on calories. Plus, it only takes 30 minutes to cook in total! 

You can choose to top this dish with cheese, crusty bread, lemon or extra herbs. Zucchini is one of the best foods for you with its high levels of vitamin C and dietary fibre so this dish is definitely the tastiest way to sneak a whole bunch of good vitamins into your diet without even noticing!

Ingredients

  • 1/2 small onion, quartered
  • 2 cloves garlic
  • 3 medium zucchini, skin on cut in large chunks
  • 1L reduced sodium chicken broth (or vegetable)
  • 2 tbsp reduced fat sour cream
  • salt and black pepper to taste

Method

  1. Heat a large pot on the stove over medium heat. Add chicken broth, onion, garlic and zucchini. Bring to boil. Reduce heat. Cover. Leave to simmer for 20 minutes.
  2. Remove from heat. Use a hand blender to mix ingredients together. Puree until smooth. Add in sour cream. Puree again. Make sure mixture is completely smooth and creamy.
  3. Add salt and pepper to taste. Stir gently. Spoon into prepared bowl. Serve hot.
