Creamy cauliflower and almond soup

The cold weather has well and truly set in with blankets and warm jackets in the plenty. But have no fear, this cauliflower and almond soup recipe is sure to warm some bellies. Slightly different to the usual cauliflower soup, the nutty flavour from the almonds is the perfect twist to change up the family favourite and best of all it requires hardly any time in the kitchen. 

Serve with a slice of warm, buttered bread to mop up all that tasty goodness at the bottom of the bowl. 

Ingredients:

  • 1 large cauliflower 
  • 75g butter
  • 50g flaked almonds, toasted
  • 1 onion
  • 800ml chicken or vegetable stock
  • 570ml full-cream milk 
  • Salt and pepper, to season

Method:

  1. Chop cauliflower florets.
  2. Heat frying pan over a medium heat and add butter. Cook onion until softened then add cauliflower and flaked almonds.
  3. Remove from heat and blend mixture into a smooth consistency.
  4. Add milk and return to the heat on low temperature. Season with salt and pepper.
