Easy no-bake lemon and coconut slice

Any chance you get to cook without turning the oven on in summer is always a winner! This no-bake slice uses minimal ingredients and is super easy to make.

Lemon and coconut are such fresh flavours and when combined with crumbling biscuits and condensed milk they make an addictive slice. Simply whip up the base ingredients and place in the fridge. The icing is spread over the top after the base has set and you’re good to go! 

Once it’s ready, slice into squares and store in an air-tight container in the fridge to protect it from the summer heat.

The recipe is perfectly portioned for picnics, afternoon teas and visits from the grandkids.

  • 125g butter
  • 395g tin sweetened condensed milk
  • 250g plain biscuits
  • 1 1/2 cups desiccated coconut
  • 1 1/2 tbsp lemon juice
  • 1 3/4 cups icing sugar
  • 2 tbsp lemon juice


  1. Prepare a slice tin by greasing and lining it with baking paper.
  2. Melt and mix together the butter and condensed milk in a saucepan over a low heat.
  3. Crush up the biscuits into a fine consistency using a food processor.
  4. Stir in the coconut, lemon juice and condensed milk mixture until combined.
  5. Press the mixture into the bottom of the prepared slice tray.
  6. Place the slice in the fridge and start making the icing.
  7. Stir together the icing sugar and lemon juice in a saucepan over a low heat until smooth.
  8. Once combined, remove the slice from the fridge and evenly spread the icing over the top.
  9. Place the slice back in the fridge until the icing is set.
  10. When set, cut the slice into squares and enjoy.
