The easiest zucchini slice

The perfect healthy snack!

If you’re after a healthy, savoury snack to tide you over between meals, then this delicious slice is what your looking for. This low-carb snack is ideal if the grandkids are hungry after school because it’s super high in protein thanks to all of the eggs plus it’s an incredibly easy and delicious way to sneak veggies into their diet. While this recipe doesn’t call for any extra ingredients, feel free to add in grated carrots, feta or even eggplant to mix up the flavour. Not to mention it only takes 15 minutes prep time before it can be left to cook in the oven. The best part about this slice is you can enjoy it fresh or you can pop it in an airtight container and freeze it for up to two months to enjoy later. 

Ingredients

  • 5 eggs
  • 150g (1 cup) self-raising flour, sifted
  • 375g zucchini, grated
  • 1 large onion, finely chopped
  • 200g rindless bacon, chopped
  • 1 cup grated cheddar cheese
  • 60ml (1/4 cup) vegetable oil

Method

  1. Preheat oven to 170C. Grease and line a 20cm x 30cm lamington pan with baking paper.
  2. Add eggs to a bowl and beat until combined. Beat in flour until smooth. Add zucchini, onion, bacon, cheese and oil. Stir mixture well to combine.
  3. Pour mixture into prepared pan. Bake for 30 minutes or until inserted skewer comes out clean. Slice and serve.
