Savoury three-cheese muffins

Yummy homemade savoury muffins!

These muffins are a great savoury treat for lunch, afternoon tea or a quick snack between meals. The mixture of the three different cheeses and the champagne ham works perfectly to create a flavoursome dish that everyone will love.  

They make for the perfect picnic snack or a great dish to bring to a lunch get together. They can also be served at room temperature or even a bit colder if you are looking to pop them in an air-tight container in the fridge. They’ll stay fresh for a few days so you can enjoy them in moderation!

Ingredients

  • 2 cups (300g) self-raising flour
  • 1/2 teaspoon ground paprika
  • 80g butter, softened
  • 6 slices champagne ham, chopped
  • 1 spring onion, thinly sliced
  • 1 tablespoon finely chopped chives
  • 1 cup (120g) shredded tasty cheddar
  • 1/2 cup (40g) finely grated parmesan
  • 100g feta, crumbled
  • 1 egg
  • 1 cup (250ml) milk

Method

  1. Preheat oven to 200C. Line a 12-hole muffin pan with paper cases. In a large bow, combine flour and paprika. Use fingertips to rub butter into the flour mixture. Combine until it resembles breadcrumbs. Add in ham, spring onion, chive, cheddar, parmesan and feta. Stir to combine.
  2. Whisk egg and milk in large jug. Make a well in centre of flour mixture. Pour egg mixture and stir to combine. Spoon evenly into paper cases. 
  3. Bake for 20-25 minutes. Turn onto wire rack to cool completely. Serve warm or cool.
