Homemade beef and black bean noodles

This delicious Chinese dish is exploding with flavour!

This classic Chinese delicacy is the ideal dinner dish that can be made in under twenty minutes. Not only is this meal packed with protein, but the black beans are also low in calories, helping with bone strengthening and heart protection.

The best thing about Chinese food is it tastes just as good the next day. So cook this up in bulk, pop it in a few containers and into the freezer for some delicious pre-made meals throughout the week. Yum!

Ingredients

  • 440g packet hokkien noodles
  • 2 tablespoons vegetable oil
  • 500g beef stir fry strips
  • 1 red capsicum, cut into thin strips
  • 1 red onion, cut into thin wedges
  • 200g green beans, halved diagonally
  • 1/2 x 515g jar black bean stir-fry sauce
  • 1/4 cup coriander leaves

Method

  1. Place noodles in a large heatproof bowl. Cover with boiling water. Use chopsticks to separate noodles as they soften. Sit aside for 5 minutes to cook. Drain water.
  2. Place a large deep frying pan over high heat. Add 2 teaspoons of oil. Stir-fry beef in 3 batches. Add extra oil to each batch. Cook for 2 minutes until browned. Transfer to plate.
  3. Heat remaining oil in pan over medium-high heat. Add capsicum, onions and beans. Stir-fry for 3 minutes until tender-crisp. Add beef and sauce. Toss to combine. Cook to heat through. Place noodles in serving plate. Top with stir-fry mixture. Sprinkle coriander leaves. Serve.
