Not only are these treats sweet and delicious, but they are also much more healthy than a regular muffin. They make for an incredibly tasty snack that you can pair up with an afternoon tea or coffee or have as a healthier dessert option.
This sweet treat uses a whole bunch of ingredients that are as good for your health as they are for your tastebuds. You definitely won’t feel guilty when you head back for your second serving of these fruit filled treats!
Ingredients
- 2 large eggs
- 150ml yoghurt
- 2 tblsp apricot jam
- 1 ripe banana, mashed
- 4 tblsp honey
- 1 tsp almond extract
- 200g of plain flour
- 1 ½ teaspoons of baking powder
- 1 ½ teaspoons of bicarbonate of soda
- extra apricot jam
- a handful of flaked almonds, for topping
Method
- Preheat oven to 180C. Line a 12-hole muffin tin with muffin cases. Add eggs, yoghurt, jam, banana, honey and almond extract into a mixing jug. Stir to combine.
- In a large bowl, add flour, baking powder and bicarbonate of soda. Mix well to combine. Add wet ingredients to dry ingredients and stir with a wooden spoon until just smooth.
- Spoon mixture into cases. Place half a teaspoon of jam onto tops of mixture. Sprinkle almond flakes over the top. Bake for 25-30 minutes until lightly golden. Check to see if cooked by inserting skewer. Leave to cool for 5 minutes in tin. Remove from tin to cool completely on wire rack. Serve.
