Easy no-bake apricot balls

The easiest treats to whip up!

Apricot balls are classic treats that are both super-easy to make and absolutely delicious. The bite-sized snacks are the best to pop on a plate and have with an afternoon cuppa or for when guests are over. The addition of white chocolate in these delicious bites makes for a sweeter and more-ish treat that will have everyone reaching for seconds. 

This recipe is very simple and flexible, so feel free to mix up the ingredients or even remove the chocolate if you are looking for a healthier option. These sweets are perfect for special occasions or just as a small treat for yourself!

Ingredients

  • 200g dried apricots
  • 1/2 cup white chocolate chips
  • 200g sweetened condensed milk
  • 100g desiccated coconut, plus extra for rolling

Method

  1. Place dried apricots in food processor. Plus for 5-10 minutes until in very fine chunks. Add white chocolate chips into food processor. Pulse together until mixed into fine chunks. Add condensed milk and coconut. Pulse for 5-10 seconds on low to combine completely. 
  2. Wet hands and remove sections of mixture. Roll into balls about a tablespoon size. Roll balls generously in extra coconut. Serve or store in an airtight container in the fridge for up to three days.
