Banana slice with cream cheese icing

This amazing banana cake is super moist thanks to the addition of sour cream and plenty of mushy bananas! Banana cake is one of those things that stands the test of time thanks to its never-fail ingredients and the fact that it’s so easy to whip up. This version turns the traditional cake into a slice with a delicious cream cheese icing topping it all off. You can sprinkle over a little shredded coconut if you like, or just serve as is!

Ingredients

  • 125g butter, softened
  • 300g caster sugar
  • 2 eggs
  • 250ml sour cream
  • 1 teaspoon vanilla essence
  • 250g plain flour
  • 1 teaspoon bicarb of soda
  • 1/4 teaspoon salt
  • 225g mashed ripe banana

Cream Cheese Icing

  • 200g cream cheese, softened
  • 80g butter, softened
  • 125g sieved icing sugar
  • 1/2 teaspoon vanilla essence

Method

1. Preheat oven to 180C. Grease a slice or lamington tin. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, bicarb and salt then stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared tin.

2. Bake for 20 to 25 minutes in the preheated oven, until a skewer inserted into the centre comes out clean. Allow the slice to cool completely before icing with the cream cheese icing.

3. Cream Cheese Icing: In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the icing sugar. Store in the fridge after use.
