We’ve come a long way since a simple two tier fruitcake with marzipan icing sufficing as a wedding cake.
These gravity-defying creations are some of the cakes created by bakers who’ve just been named as finalists in the Haute Couture Wedding Cake Designer of the Year category at the upcoming International Cake show.

Best known for her ‘show-stopping’ cakes, Sydney-based cake designer Monica Cavallaro, owner of Moreish Cakes, has been nominated as a finalist at the upcoming International Cake Show. She sprung to cake-fame after appearing on the hit television series Great Australia Bake Off, and recently baked the wedding cakes for Married at First Sight.

After many years of working as a pastry chef, Gold Coast-based cake designer, Louisa Massignani, started Cakes Alouisa, and it’s fare to say her cakes are close to perfect!
Internationally renowned pastry chef and wedding cake designer, Greg Cleary, opened Sweetums Designer Cakes in 1997 in Brisbane, which is best known for its award-winning couture-style wedding cakes.
Also nominated is world champion artisan baker Shayne Greenman, who has won awards throughout Australia, Europe and the United States.
Regardless of whether you’re a beginner or professional, ICSA, hosted by the Australian Cake Artists Decorators Association (ACADA), is a fun-filled three-day event located at Brisbane Showgrounds from 18-20 May.
