I’ve just eaten breakfast! You’re probably thinking that everybody eats breakfast, but for the longest time I have not.
For a number of years food and I, first think in the morning, have had a challenging relationship. Until the day I’d become ill — and I was still working at the time — I could only stomach a cup of coffee and a piece of toast with either avocado or tomato on top. Quite healthy, in my opinion.
Then I got sick. The medication was turning me into a blimp. I had no appetite and I struggled to even make myself one meal a day. That was 10 years ago. Even though my health improved, the thought of having to eat something in the morning would make my stomach lurch.
Recently though I must have had an epiphany of sorts. I’d found this little avocado in the fridge. It looked past its ‘used by’ date, but I cut it open anyay. It was still good, so I mashed it up with a bit of lemon juice, salt and black pepper, and put it into one of those trendy air-tight containers so that I could use it later. ‘Later on’ turned into a few days, and for some unfathomable reason I decided to cook a slice of toast and spread the avocado on it… for breakfast!
It gets better for me. A friend was calling in to see me, so I could some of those lovely little spinach and cheese triangles that ‘Mr Borg’ makes. I beat an egg to ‘wash’ them, sprinkled some Parmesan cheese on top and voila! Delicious. I still had beaten egg left over, so I added another egg, some milk, cheese and ham and before I knew it I had scrambled eggs for breakfast on multigrain toast and a cuppa.
Having breakfast two days in a row is unbelievable! At least, it is for me. I suspect there would be a few over-60s in the same boat as me too, who for one reason or another (ill health, economy, simple lack of motivation) don’t eat in the morning. I might just have to keep up this trend of mine… I’m even happy to do the extra dishes too!
