Super-easy zucchini and corn muffins

It is way too easy to snack on unhealthy treats throughout the day, so why not plan ahead and prepare some healthier alternatives? These zucchini and corn muffins are both healthy and flavoursome, making the perfect option for an afternoon tea snack when you start to get tired. These tasty snacks can be made ahead of time and placed in the freezer to eat at a later date. They also work well in school lunch boxes, to change it up from the usual sandwich. 


  • 2 cups self-raising flour
  • 2 tablespoons chopped chives or green onion 
  • 1 cup grated tasty cheese
  • 1/4 cup grated parmesan
  • 1 medium zucchini, grated
  • 125g can corn kernels, drained
  • 2 eggs, lightly beaten 
  • 2 tablespoons extra virgin olive oil
  • 1 cup low fat milk 


  1. Mix together flour, chives, cheeses, zucchini and corn in a large bowl. In a seperate bowl whisk together eggs, oil and milk. Pour egg mixture into centre of other ingredients and stir together.
  2. Place mixture in lightly greased muffin cups. Cook in a preheated 200C/180C fan forced oven for 25 minutes.
