The ultimate double chocolate chip biscuits

There’s a pretty wide range of biscuit recipes out there, so finding the best of the bunch can be a tough job. However, you can’t go past these chewy chocolate biscuits – and they’re a treat to impress even the toughest of crowds!

With the perfect amount of sweetness, these milk and dark chocolate mixed biccies are absolutely ideal for bringing along to family get-togethers or even popping into an airtight container to enjoy over a longer period of time – of course, that’s only if you have the self-control to make them last longer than a few days! Enjoy!

Ingredients

  • 1/2 cup (100g) caster sugar
  • 3/4 cup (165g) brown sugar, packed
  • 1 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (155g) plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 110g milk chocolate chips
  • 110g dark chocolate chips

Method

  1. Combine caster sugar, brown sugar, salt, and butter in large mixing bowl. Whisk together until smooth batter forms. Whisk in egg and vanilla. Beat until batter is light and smooth. Sift in flour and bicarb soda. Fold mixture with spatula (make sure not over-mix). Fold in chocolate chunks.
  2. Chill dough for at least 30 minutes or overnight if looking for a more intense flavour.
  3. Preheat oven to 180C. Line baking tray with baking paper. Spoon out dough. Place onto baking tray. Make sure to leave about 10cm of space between biscuits to allow for spreading.
  4. Bake for 12-15 minutes, or until the edges have started to barely brown. Cool completely. Serve.
