It's hard to beat this perfect leg of ham for Christmas lunch!

Being in charge of the main dish at any event is stressful, but doing it for the biggest family gathering of the year on Christmas day, is even more daunting. Choosing a delicious glaze that everyone will love all while making sure the ham looks nice enough to double as a table centre piece can be incredibly hard. But this simple recipe makes everything a bit easier. It gives you a basic way to whip up a juicy leg of ham with a mouth-watering maple honey mustard glaze that is topped with aromatic herbs. This dish is cooked to perfection and will most definitely be a crowd pleaser with anyone who comes along to your Christmas lunch this year!


  • 100g (1/2 cup, firmly packed) brown sugar
  • 80ml (1/3 cup) maple syrup
  • 80ml (1/3 cup) honey
  • 1 tablespoon Dijon mustard
  • 1 (about 8kg) whole leg ham, on the bone
  • Whole cloves, to stud


  1. Add sugar, maple syrup, honey and mustard to a bowl. Stir well until the sugar completely dissolves.
  2. Preheat oven to 170C. Line large baking dish with 2 layers of non-stick baking paper. Place an oven shelf in the lowest position and remove all other shelves. Cut around the shank of the ham about 10cm from the end with a very sharp knife. Run knife under rind around edge of ham. Carefully lift rind off in one piece by running fingers between rind and fat. Score fat in a diamond pattern, about 5mm deep. Press cloves into centres of each diamond. Transfer to prepared dish.
  3. Brush one-third of glaze over the ham. Bake, brushing with glaze every 25 minutes, for 1 hour 30 minutes. Remove from oven. Carve and serve.
