Whether you prefer to leave flour out of your recipes or you’re just running low on ingredients, these mouth-watering biscuits are a great way to still enjoy the delicious chocolatey flavour without one of the key ingredients.

While no chocolate biscuit is completely guilt-free, these are definitely a lighter option than other recipes – as they’re made without any flour or butter at all. The super simple treats are great for whipping up when you’re struggling for time, as they can be made in under 20 minutes and, better still, the batter comes together in just one bowl. So, if you’re looking for something a bit different to serve alongside your hot cuppa, give these tasty treats a go!

  • 1 1/2 cup (180g) icing sugar
  • 1/3 cup (35g) unsweetened cocoa powder
  • Pinch of salt
  • 1 or 2 large egg whites at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (90g) semi-sweet chocolate chips

  1. Preheat oven to 180C. Line baking tray with baking paper. Whisk icing sugar, cocoa powder and salt together in a large bowl. Whisk in vanilla extract and egg white. Mix until batter is thick but moist. If it’s too thick, add another egg white. Fold in chocolate chips.
  2. Spoon tablespoons worth of batter onto prepared tray. Leave space between each biscuits to spread.
  3. Bake for 12-14 minutes, until tops are glossy and begin to crack. Let cookies cool completely before serving.
