The best chewy chocolate chip biscuits

When it comes to baking chocolate chip biscuits, there are countless recipes to choose from. But look no further, as these soft and chewy biscuits are by far the best of the bunch. With a mouthwatering amount of melted chocolate chunks in each biscuit, your grandkids will go absolutely crazy for these treats. They’re fantastic for packing up and taking to lunch get-togethers, enjoying as a guilty treat with a scoop of vanilla ice cream or even popping in a bag and handing out as a delicious homemade gift to family and friends.   • 1/2 cup (100g) caster sugar
  • 3/4 cup (165g) brown sugar, packed
  • 1 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (155g) plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 110g milk or semi-sweet chocolate chunks
  • 110g dark chocolate chunk, or your preference


  1. Whisk caster sugar, brown sugar, salt and butter together in large bowl until smooth and free of lumps. Add egg and vanilla. Whisk together until smooth and soft.
  2. Next, sift in flour and bicarbonate of soda. Fold mixture with spatula, without over-mixing.Gently fold in chocolate chunks.
  3. Cover and place in refrigerator to chill at least 30 minutes or overnight for a more complex flavour.
  4. Preheat oven to 180°C. Line baking tray with baking paper. Use ice-cream scoop to scoop out dough onto tray. Leave about 10cm of room between cookies for spreading. Bake for 12-15 minutes, or until the edges have just started brown. Cool on wire rack. Serve.
