The best apricot and almond teacake

This sweet cake is one of the best afternoon tea options ever. This traditionally French recipe pairs apricots and almonds together to make the most delicious flavour that will have all of your guests asking you for the recipe. This light cake is perfect for the summer heat as the addition of fresh apricots creates such a tasty, refreshing flavour. It’s not sickly sweet like other afternoon tea options, but it will definitely satisfy any cravings you might have. Bake this up and pop it an airtight container to enjoy over the course of about three days or even freeze it to enjoy for even longer!


  • 5 ripe apricots
  • 150g butter
  • 100g caster sugar (plus 10 g extra)
  • 3 eggs
  • 50g orange blossom honey
  • 120g almond meal
  • 100g self-raising flour
  • 20g flaked almonds


  1. Preheat oven to 200C. Grease a 24cm (base) cake tin. Wash apricots. Cut in half and remove stones.
  2. Add butter and sugar to large mixing bowl. Using an electric beater, beat together for a few minutes until creamed. Beat in eggs. Stir in honey.Fold in almond meal and flour.
  3. Spoon cake mixture into prepared tin. Spread over top with back of spoon to level. Arrange apricot halves on top of batter. Sprinkle with extra sugar. Top with flaked almonds.
  4. Bake for 45 minutes or until skewer inserted in centre comes out clean. Leave to cool in pan for 10 minutes. Turn out onto wire rack to cool completely. Slice and serve.
