The best apple cinnamon fritters

If you’re looking for a super simple recipe that won’t take you too long to make but still tastes absolutely delicious, go no further than this tasty treat! These deep-fried apple fritters are unlike anything else. With a crunchy, flavourful coating and a sweet apple filling, you won’t be able to stop yourself from going back for seconds when it comes to these.

While they’re fantastic on their own, you could also serve them up for dessert by adding a scoop of vanilla ice cream and drizzling over a generous amount of golden syrup. Enjoy!

Ingredients

  • 1 cup self-raising flour
  • 1/4 teaspoon bicarbonate of soda
  • 1 cup soda water, chilled
  • 1/2 cup caster sugar
  • 1 teaspoon ground cinnamon
  • 2 large pink lady apples
  • Vegetable oil, for shallow-frying

Method

  1. Sift flour and bicarb into mixing bowl. Gradually add soda water. Continuously whisk while adding until a smooth batter forms.
  2. Combine sugar and cinnamon in separate shallow dish. Peel and core apples. Cut into thick rounds.
  3. Heat oil in large, deep frying pan over medium-high heat. Dip 1 apple slice in batter and allow excess to drain. Carefully add to oil. Repeat with 3 more apple slices. Cook for 1 to 2 minutes each side or until golden.
  4. Use slotted spoon to transfer fritters to plate lined with paper towel and let drain for 20 seconds. Add to cinnamon sugar. Toss to coat. Transfer to plate. Repeat with remaining apple, batter and sugar. Serve.
