Tender slow cooker beef and pork meatballs

With a mouthwatering mix of beef, pork and garlic coated in a classically Italian tomato sauce, you just won’t be able to resist these delicious meatballs. Other than the rich, addictive flavour, the best part about this recipe is how incredibly simple it is to make thanks to your trusty slow cooker.

There’s no need to hover around the stove and no risk of burning or undercooking any of the meatballs, plus you’re left with plenty of perfectly cooked, melt-in-your-mouth meatballs coated in the most flavourful traditional sauce. Enjoy!

Ingredients

  • 450g beef mince
  • 450g pork mince
  • 1/4 cup onion, diced
  • 2 cloves garlic, crushed
  • 2 tablespoons parsley, roughly chopped
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup parmesan cheese, grated
  • Salt and pepper
  • 2 x 700g cans crushed tomatoes
  • 170g tomato paste
  • 2 whole bay leaves
  • 1/2 teaspoon crushed red chilli flakes
  • 1/2 teaspoon Italian seasoning

Method

  1. Combine beef, pork, onion, garlic, parsley, breadcrumbs, eggs and cheese in large bowl. Season well with salt and pepper. Mix with hands until completely combined. Shape mixture into 4-5cm diameter balls.
  2. Lightly grease baking tray. Place under grill. Grill meatballs on high until browned on each side or for about 4-5 minutes on each side.
  3. Place meatballs in bowl of slow cooker. Top with crushed tomatoes, tomato paste, bay leaves, red pepper flakes and Italian seasoning. Cook on low for 4 hours. Season with salt and pepper to taste. Serve.
