Ingredients

  • 3 eggs
  • 375 ml milk
  • 250ml thickened cream
  • 40 g unsalted butter, melted and cooled
  • 110g white sugar
  • 1 tsp cinnamon powder
  • 1 tsp vanilla extract
  • 7 heaped cups white bread, preferably slightly stale, cut into 2.5cm pieces
  • 1 cup sultanas
    Topping
  • 30 g unsalted butter, melted
  • 20 g unsalted butter, melted – for brushing post baking
  • Icing sugar, for dusting

Method

  1. Preheat oven to 180C. Place eggs in a large bowl, whisk briefly. Whisk in milk, thickened cream, butter, sugar, cinnamon and vanilla. Add bread and sultanas, briefly mix, then set aside for 3 minutes to allow egg mixture to soak through bread.
  2. Pour into a 10 cup or 2.5 litre baking dish. Poke in excess sultanas into the mixture a bit. Drizzle over 2 tbsp melted butter. Bake for 20-25 minutes or until golden on top and the inside is set but still slightly wobbly.
  3. Brush with remaining 1 1/2 tbsp melted butter. Dust with icing sugar. Serve immediately, with toppings of choice.
