These tasty snacks will have everyone reaching for seconds!

Not only are these delicious bite-sized snacks incredibly easy to make but they’re also a healthier option to snack on throughout the day than the usual cake and biscuits. For something that’s just a bit better for you, rather than using sugar, natural honey is the perfect replacement. This, along with almond meal and rolled oats, makes for the most delicious afternoon tea snack. You can serve these up to friends and family when they come over or pop them in an airtight container and freeze them for up to two months. If you want to give your sweet tooth an extra delicious treat, try drizzling a little bit of warm honey over the top. Yum! 


  • 1 cup self-rising flour
  • 1/2 tsp baking powder
  • 1 cup old fashioned rolled oats, plus extra to sprinkle
  • 1/2 cup almond meal
  • 1/2 cup dried apricots roughly chopped
  • 3/4 cup milk
  • 1/4 cup honey
  • 4 Tbs butter
  • 1 egg beaten


  1. Preheat oven to 180C. Line a 12-hole muffin pan with paper liners. Sift flour and baking powder into large bowl. Add oats, almond meal and apricots. Stir well to combine.
  2. In separate bowl, whisk together the milk, honey, butter and egg. Make well in dry ingredients. Pour in wet. Mix until just combined, do not over mix.
  3. Spoon batter between the 12 muffin holes. Sprinkle with extra oats. Bake for 15-20 minutes or until they spring back when touched lightly. Cool on a wire rack. Serve.
