These tasty treats are absolutely ideal for using up your pantry staples when fresh foods start to run low. With just a handful of super-simple ingredients, this recipe is the ideal low-maintenance meal for those busy weeknights.
If you’re looking for a lighter lunch or dinner option this one is fantastic, simply serve the patties up on their own or with a side salad if you prefer something a bit extra. Don’t forget a dipping sauce of your choice like a bit of sweet chilli and you’re good to go!
Ingredients
- 4 sebago potatoes, peeled
- 425g can tuna, in brine or spring water, drained
- 1 egg
- 1 carrot, grated
- 1 celery stick, finely sliced
- Plain flour, to dust
- Oil, to fry
- Side salad, to serve
Method
- Cook potatoes in saucepan of boiling water until tender. Drain and mash.
- In bowl combine tuna, mashed potato and egg. Stir in the carrot and celery.
- Place some flour on plate. Divide mixture into 8 portions. Shape each portion into a patty. Coat both sides lightly in the flour. (Or, if you’d prefer, you can also use breadcrumbs to get a nice crispy coating – as pictured)
- Heat a little oil in a frying pan over a medium heat. In batches, cook the patties for 3-4 minutes each side or until golden. Transfer to a plate lined with paper towel to drain. Serve with a side salad.
