Use-for-everything savoury mince

Cooking this tasty dish really is as easy as throwing everything into the pan and letting it simmer away. Somehow, despite the lack of effort that’s needed to make this savoury mince, it still tastes absolutely delicious. Not only will it provide you with your daily serving of veggies but it’s also super high in protein and low in carbs for those wanting to cut back after the Christmas holidays. Once cooked, this mince is surprisingly versatile and can be served many ways. Try dishing up with a baked potato or sweet potato, or keep things simple and enjoy with a slice of crusty bread, or just a simple side of greens. You can also use it to make stuffed vegetables. Try using the mince the fill hollowed out capsicums, zucchinis or eggplants. It’s also great for popping in the freezer to pull out on a night you don’t feel cooking. Enjoy!

Ingredients

  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 500g beef mince
  • 2 tablespoons instant beef gravy powder
  • 1 cup tomato puree
  • 400g desiree potatoes, peeled, diced
  • 300g carrots, peeled, diced
  • 200g button mushrooms, quartered
  • 1 cup frozen peas and corn mixture steamed
  • Steamed white rice, to serve

Method

  1. Heat oil in saucepan over medium-high heat. Add onion and mince. Use a wooden spoon to break up mince. Cook mince and onion for about 8 minutes or until mince is browned and cooked through.
  2. Add gravy powder, tomato puree and 1 cup cold water. Stir mixture well to combine.
  3. Add potatoes and carrots. Season mixture well with salt and pepper. Cover and bring to the boil. Reduce heat to medium-low. Let simmer and stir occasionally for 20 minutes or until potato is just tender.
  4. Add mushrooms and pea and corn mixture. Cook for 5 minutes to heat through. Serve with your favourite side dish.
