Super-easy crispy sweet potato bake

Potato bake has long been the classic side dish that was made to complement a range of meals. However, this healthier version of the all-time favourite might just be the best of the bunch. While traditional potato bake is delicious, it can often be too heavy and filling, which is why this dish is so great for anyone looking for an easier, healthier and even tastier option. This sweet potato version is to die for with its crispy, buttery slices topped off with a generous amount of thyme, parsley, salt and pepper. It’s so incredibly easy to make and is absolutely ideal for bringing along to family get togethers or serving up next to a main meal to help complement the flavours!


  • 1.5 kg sweet potato, peeled
  • 50g butter melted (or coconut oil)
  • 1 tsp dried thyme
  • Salt and pepper
  • 1 1/12 tbsp parsley, chopped


  1. Preheat the oven to 200C. Grease a baking dish. Cut sweet potatoes in half lengthways, so they have a flat side. Slice into thin semi circle slices.
  2. Place slices in large bowl. Pour melted butter or oil over the top. Add thyme, salt and pepper. Stir well until potato is coated.
  3. Line up slices upright in baking dish. Top with parsley and extra salt and pepper to taste. Place in oven and roast for 1 hour and 15 minutes. Serve hot.
