Super-easy cauliflower, chicken and corn bake

If you’re looking for a quick and easy dinner that will fill a hungry crowd then this tasty treat is spot on. Combining a super creamy filling with a crunchy bread and cheese topping, it also has plenty of great vegetables in the mix including corn, cauliflower and spring onion.

This hearty dinner dish is best served fresh from the oven to warm you all up on a cool night. While the recipe calls for one large bake, if you’re looking to serve to guests and make the appearance of the meal a bit different, try spooning the mixture into about four 500ml dishes rather than one 2L dish. Enjoy!


  • 2 cups shredded roast chicken (about 1/2 chicken)
  • 420g can creamed corn
  • 420g can corn kernels, rinsed, drained
  • 1/2 head cauliflower, cut into small florets
  • 1 garlic clove, crushed
  • 2 spring onions, thinly sliced
  • 1/2 cup (125ml) cream
  • 1 cup (120g) grated tasty cheddar
  • 200g light rye sourdough, crust removed, torn into 2cm pieces


  1. Preheat oven to 180C. Grease a 2L ovenproof casserole dish.
  2. Combine chicken, creamed corn, corn kernels, cauliflower, garlic, spring onion, cream and half the cheddar in a large bowl. Mix. Season.
  3. Spoon chicken mixture into prepared dish. Top with bread and sprinkle with remaining cheddar. Bake for 20-25 mins or until mixture is heated through and top is golden. Serve.
