Simple berry and chia seed pudding

If you haven’t tried a chia seed pudding, you’re missing out. These tasty and refreshing snack-sized treats are absolutely perfect for breakfast or pairing with your morning or afternoon tea cuppa. Not only is this recipe super simple to whip up but these treats are incredibly healthy and will easily become your new favourite good-for-you snack. The pudding texture helps to keep you fuller for longer while it’s also packed with fibre and is super low in sugar! The best part is you can whip up a big batch of this pudding at the start of the week and enjoy it as a go-to treat whenever you’re craving something sweet. Enjoy!

Ingredients

  • 6 tablespoons chia seeds
  • 2 cups unsweetened coconut, almond or cashew milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup, honey or sweetener of choice
  • Mixed berries, for topping

Method

  1. Add chia seeds, milk, maple syrup and vanilla to a bowl. Mix together to combine. Set aside to sit for 5 minutes. Stir mixture again to break up clumps of chia seeds.
  2. Cover bowl and place in refrigerator to chill for 1-2 hours or overnight. If pudding is not thick enough, add more chia seeds, stir to combine and chill in fridge for another hour.
  3. Once thick and chilled, transfer to serving bowls. Top with berries. Serve.
