Dairy-free passionfruit and mango ice cream

Summer is almost over but there’s still time to make use of the delicious fruits the season is renowned for. This refreshing dessert uses a combination of the best summer flavours, from peach to mango and passionfruit, and combines them to create a healthy treat that good for your waistline and your tastebuds. Unlike classic ice cream recipes, this version uses a small amount of almond milk to give the mixture a silky creaminess without the dairy. It’s lovely as an after-dinner treat or a sweet snack to enjoy on a hot afternoon. If you’re serving it to guests and want to dress it up a little, dish up with a drizzle of passionfruit over the top and a sprig of mint to finish.


  • 1 yellow peach
  • 2 ripe bananas
  • 1 mango, roughly chopped, (you can use tinned or fresh)
  • 1/2 cup unsweetened almond milk
  • 2 passionfruit, halved


  1. Line baking tray with baking paper. Carve a cross into the base of peach. Place peach in small heatproof bowl and cover completely with boiling water. Let stand for 5 minutes. Carefully drain water. Set aside until cool enough to handle. Peel skin from peach. Discard skin and stone. Roughly chop flesh. Peel bananas. Slice into 4cm pieces. Lay peach, banana and mango, in single layer, on prepared baking tray. Freeze for 4 hours or overnight.
  2. Add frozen fruit and milk to a food processor. Process, scraping down sides occasionally, until completely smooth and creamy.
  3. Work quickly to spoon mixture into serving dishes. Drizzle generously with passionfruit pulp. Chill in fridge if necessary or serve immediately.
