Refreshing cucumber soup

A starter is usually one of the harder meals to think of when organising a dinner party. However, this refreshing and light option is definitely one of the best to go for. It’s easy on the stomach, doesn’t have too many strong flavours that will interfere with the main meal and it takes barely any effort to whip up. You can make this as your guests arrive and pop it in the fridge to be served as fresh as can be when you need it. It also makes a fantastic lunch on a summer day as well as a tasty and healthy dinner option if you don’t feel like a hot meal in the evening.   • 3 (about 500g) Lebanese cucumbers, chopped, plus extra to serve
  • 1 cup buttermilk
  • 1 cup sour cream
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons sherry vinegar
  • Black pepper, cracked, to taste
  • Extra virgin olive oil, to serve


  1. Add cucumbers buttermilk, sour cream, dill and sherry vinegar to a blender. Season well. Blend together until smooth and completely combined. Cover mixture and chill in fridge for around 1 hour to thicken.
  2. Divide evenly among bowls. Top with finely chopped cucumber, cracked pepper and a drizzle of extra virgin olive oil. Serve.
