Quick and easy sweet potato and thyme bake

Potato bake doesn’t have to be boring, and with a mix of potato and sweet potato topped with some flavourful herbs like thyme and parsley, this dish is a delicious and more exciting side dish to impress your dinner guests.

Like any good side, these flavours are perfect for complimenting a main meal without taking the spotlight completely. And by using pre-cut, frozen potato cubes, this recipe could not be anymore straightforward. It really is as easy as throwing everything in the dish and baking, which means it’s absolutely ideal for cooking up fresh for dinner parties or family get-togethers.


  • 3 cups frozen potato cubes
  • 500g packet frozen sweet potato cubes
  • 1 medium brown onion, halved, thinly sliced
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 300ml tub light thickened cooking cream
  • 2/3 cup grated tasty cheese
  • 2 tablespoons dried breadcrumbs


  1. Preheat oven to 200C. In an 8-cup capacity ovenproof dish, layer potato, sweet potato, onion, thyme and parsley. Pour cream over top. Top with cheese and breadcrumbs. Season well with salt and pepper.
  2. Bake for about 1 hour or until potato is tender. If top starts to over-brown during cooking, cover with foil. Serve.
