Retro pineapple upside-down cake

It may be winter but that doesn’t mean you can’t enjoy some summery desserts! The pineapple upside-down cake is an old family favourite that is still loved by many and this recipe is sure to bring back some great memories. Sugary, sweet and delicious, this dessert is so easy to whip up for an afternoon tea or tasty after dinner treat.



  • 50g softened butter
  • 50g brown sugar
  • 7 pineapple rings in syrup, drained and syrup
  • glacé cherries


  • 100g softened butter
  • 100g golden caster sugar
  • 100g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract 
  • 2 eggs


  1. For the topping, mix together butter and sugar until creamy consistency. Place into a 20-21cm round cake tin, spreading over base and a quarter of the way up the sides. Place pineapple rings on top, and cherries into the centre of the rings.
  2. Place all cake ingredients and 2 tsp of pineapple syrup in a bowl and mix to a creamy consistency using electric mixer. Spoon into the tin on top of pineapple, smooth out to cover all of fruit. Cook in a 180C/160C fan preheated oven for 35 minutes. Allow to cool for five minutes and then turn out onto a plate. Serve warm.
