Delicious no-bake lemon pie

Love a no-fuss, tasty dessert? This delicious recipe is a must-try! Light and refreshing, this no-bake lemon pie is super easy to whip up and great to have on-hand, no matter the occasion. Bursting with flavour, the incredible filling is made up of cream, sugar, butter and lemon rind and juice. The best part is, you don’t even need to turn on the oven as the pie sets in the fridge (perfect if you’re running errands all day!).


  • 250g packet granita biscuits
  • 125 butter, melted
  • 4 gelatine leaves
  • 600ml thickened cream
  • 395g can sweetened condensed milk
  • 2 tsp finely grated lemon rind
  • 1/2 cup lemon juice
  • 2 drops yellow food colouring gel
  • 1 tbsp caster sugar
  • 2 tsp finely chopped fresh mint leaves
  • 1 lemon, sliced, to serve


  1. Grease a 22.5cm base pie dish. 
  2. Using a food processor, process biscuits until fine crumbs form. 
  3. Add butter. Process until combined. 
  4. Spoon mixture over base and side of prepared dish. Refrigerate while preparing filling. 
  5. Place gelatine leaves in a bowl. Cover with cold water. Set aside for 5 minutes or until softened. 
  6. Meanwhile, using an electric mixer, beat one cup cream until firm peaks form. 
  7. Whisk condensed milk, lemon rind and juice together in seperate bowl. 
  8. Squeeze excess water from gelatine.
  9. Place gelatine in small saucepan over medium heat. Cook for 1 minute. 
  10. Add to lemon mixture. Mix well. Stir in food colouring. 
  11. Fold beaten cream into lemon mixture, in two batches. 
  12. Pour mixture into prepared pan. Refrigerate for 6 hours. 
  13. Using an electric mixer, beat remaining cream. Combine sugar and mint in a bowl.
  14. Dollop pie with whipped cream and decorate with lemon slices. Sprinkle with sugar mixture.
