Low-carb creamy zucchini Alfredo

This mouth-watering dish is easily cooked in under 10 minutes, it’s low maintenance as it only uses one pot, it’s cheap with just seven ingredients on the list, and it’s super healthy with the help of zucchini noodles.

Even though it’s incredibly light on the stomach, it still keeps that deliciously rich, creamy taste that everyone adores in the traditional Alfredo dish. This is the ideal dinner option that everyone from adults to kids will easily fall in love with. If you have any leftovers, package them up and pop them in the fridge to enjoy the next day!


  • 1 tablespoon extra virgin olive oil
  • 15g butter
  • 2 x 250g packets zucchini noodles
  • 2 garlic cloves, finely chopped
  • 100g cream cheese, chopped
  • 1 tablespoon thickened cream
  • 20g (1/4 cup) finely grated parmesan, plus extra to serve


  1. Heat oil and butter in frying pan over medium-high heat. Heat until butter is foamy. Add zucchini noodles. Occasionally toss noodles with tongs to coat, for 1-2 minutes or until slightly wilted. Transfer to plate.
  2. Add garlic to pan. Cook and stir for 1 minute or until aromatic. Add cream cheese, cream and 60ml (1/4 cup) water. Reduce heat to low. Cook while stirring often for 3 minutes or until mixture has smoothed.
  3. Add parmesan. Stir well and season. Add zucchini back to pan. Toss to combine. Transfer to serving plates. Top with extra parmesan. Serve.
