Light mango and coconut pudding

A perfect, light dessert option!

If you’re after a lighter, more refreshing dessert after a heavy dinner, this pudding is perfect. The rich flavours of mango and coconut are incredibly refreshing and for something that tastes so good, it’s surprisingly easy to whip this dish up with a preparation time of just 15 minutes.

It’s a super unique and flavourful dish to serve up to dinner guests or to simply enjoy for yourself as a light sweet treat. Enjoy!

Ingredients

  • 3 frozen mango cheeks, thawed
  • 250ml (1 cup) mango nectar
  • 1 tablespoon fresh lemon juice
  • 125ml (1/2 cup) coconut milk
  • 125ml (1/2 cup) pouring cream
  • 140g (2/3 cup) caster sugar
  • 1 x 10g pkt gelatine powder
  • Diced mango, to serve

Method

  1. Add mango cheeks, nectar and lemon juice to a food processor. Process until completely smooth.
  2. Add coconut milk, cream and sugar to a saucepan over medium heat. Bring to a simmer. Cook and stir for 5 minutes or until the sugar dissolves. Remove from heat. Sprinkle with gelatine. Whisk with fork until gelatine dissolves.
  3. Add cream mixture and mango mixture to food processor. Process until well combined. Strain through a sieve into a large jug. Pour mango mixture among six 200ml-capacity dishes. Set aside for 10 minutes to cool. Cover and place in the fridge for 6 hours or until set.
  4. Top with diced mango and serve.
