Quick and easy chocolate mug cake

It’s safe to say that almost everyone has experienced that dreaded moment when you’ve just finished dinner and you’re desperately in need of something to satisfy your sweet tooth and a piece of fruit just won’t cut it.

Times like these call for a quick and easy dessert treat that is mess-free and doesn’t leave any leftovers to deal with. This delicious chocolate dessert can be made in less than five minutes with only a few ingredients that you most likely already have in your pantry. If you’re looking to make the cake even more dense, try adding chocolate chips or a spoonful of hazelnut spread in the middle of the batter before popping it into the microwave. Yum!

Ingredients

  • 35g (1/3 cup) self-raising flour
  • 1 tablespoon cocoa, plus extra to dust
  • Pinch of salt
  • 1 1/2 tablespoons firmly packed brown sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 tablespoon melted butter
  • 1/4 teaspoon vanilla extract

Method

  1. In a small bowl, sift flour, cocoa powder and salt together. Stir in sugar.
  2. Add egg, milk, butter and vanilla to separate small bowl. Whisk to combine. Add wet ingredients to dry ingredients. Stir with a fork until just combined (don’t over-mix).
  3. Pour mixture into 2-cup capacity mug. Microwave on high for 70-90 seconds, or until cake has risen significantly and top is just set. Avoid over-cooking cake. Dust with extra cocoa powder, serve immediately.
