It’s safe to say that almost everyone has experienced that dreaded moment when you’ve just finished dinner and you’re desperately in need of something to satisfy your sweet tooth and a piece of fruit just won’t cut it.
Times like these call for a quick and easy dessert treat that is mess-free and doesn’t leave any leftovers to deal with. This delicious chocolate dessert can be made in less than five minutes with only a few ingredients that you most likely already have in your pantry. If you’re looking to make the cake even more dense, try adding chocolate chips or a spoonful of hazelnut spread in the middle of the batter before popping it into the microwave. Yum!
Ingredients
- 35g (1/3 cup) self-raising flour
- 1 tablespoon cocoa, plus extra to dust
- Pinch of salt
- 1 1/2 tablespoons firmly packed brown sugar
- 1 egg
- 2 tablespoons milk
- 1 tablespoon melted butter
- 1/4 teaspoon vanilla extract
Method
- In a small bowl, sift flour, cocoa powder and salt together. Stir in sugar.
- Add egg, milk, butter and vanilla to separate small bowl. Whisk to combine. Add wet ingredients to dry ingredients. Stir with a fork until just combined (don’t over-mix).
- Pour mixture into 2-cup capacity mug. Microwave on high for 70-90 seconds, or until cake has risen significantly and top is just set. Avoid over-cooking cake. Dust with extra cocoa powder, serve immediately.
