Sometimes you crave a homemade treat that’s still warm from the oven and made with love, but you just don’t feel like baking, and store-bought products won’t hold up. Now with these super-speedy muffins, you can enjoy all the delicious tastes and smells of freshly baked goods, without the effort! With just five basic, budget-friendly ingredients and 30 minutes of free time, you can whip up these tasty bite-sized treats with no fuss needed – and the best part is, they’re actually better for you! With no added refined sugars, no flour for those that are gluten intolerant and no overly-processed ingredients – these all-natural muffins will easily become your favourite snacks for a lazy day!

Ingredients

  • 4 large over-ripe bananas, mashed
  • 1 teaspoon bicarbonate of soda
  • 4 eggs
  • 1 1/3 cups smooth peanut butter, plus extra to serve
  • 2 teaspoons vanilla extract

Method

  1. Preheat oven to 200C/180C fan-forced. Line 12-hole muffin pan with paper cases.
  2. Add all ingredients to bowl of a food processor. Process until just combined, make sure you don’t over-mix.
  3. Spoon mixture evenly into each prepared hole. Bake for 15 to 20 minutes or until firm to touch and cooked through. Cool in pan for 5 minutes. Transfer to wire rack to cool completely.
  4. Spread extra peanut butter over each muffin. Serve.
