Everyone will fall in love with this tasty soup.

There’s nothing like tucking into a comforting bowl of soup on a rainy day and this tasty recipe is one of the best. It’s full of flavour thanks to bay leaf, celery and zucchini and a good helping of smoked ham hock for that deliciously rich flavour. A dash of cream just before serving helps create a smooth finish that makes it all the more moorish, while a slice a crusty bread slathered with butter is just the thing to soak up all those delicious flavours at the bottom of the bowl. Dig in and enjoy!

Ingredients

  • 1 tablespoon extra virgin olive oil, plus extra, to drizzle
  • 1 brown onion, peeled, cut into quarters
  • 4 celery sticks, finely chopped
  • 1 fresh bay leaf
  • 4 medium zucchini, thinly sliced into rounds
  • 800g-1kg smoked ham hock
  • 1.5-2L (6-8 cups) water
  • 2 tablespoons pouring cream

Method

  1. Heat oil in large, heavy-based saucepan over medium heat. Cook onion, celery and bay leaf. Stir for 5 minutes or until softened. Add zucchini. Cook for 3 minutes or until softened slightly.
  2. Add ham hock to pan. Pour in enough water to just cover ham. Increase heat to high. Bring to the boil. Reduce heat to low. Cover and simmer, stirring occasionally, for 45 minutes or until meat is tender and comes away easily from the bone. Remove pan from heat.
  3. Remove ham hock from soup mixture and allow to cool slightly. Use two forks to shred meat. Discard skin, fat and bone. Remove bay leaf from soup and discard.
  4. Use stick blender to blend soup until smooth. Add cream. Stir well to combine. Season to taste. Return soup to low heat and stir until warmed through. Add almost all ham and stir through. Ladle into serving bowls. Top with remaining ham. Serve.
