Healthy carrot and ginger soup

A warm dinner dish to fight away sickness.

If you’re trying to fight off a pesky cold or flu then we recommend whipping up this deliciously creamy and thick carrot and ginger soup. This is super low calorie and full of ingredients that will do wonders for your insides. Ginger has a number of health benefits, including relieving nausea and muscle pain. Meanwhile you’ll also be enjoying a full intake of carrots and potatoes in this super easy recipe. Try it with a side of dipping bread so you can really soak up every last drop!

Ingredients

  • 1 tablespoon pure olive oil
  • 1kg carrots, peeled, chopped
  • 2 potatoes, peeled, chopped
  • 2 tablespoons grated ginger
  • 2 teaspoons ground cumin
  • Cracked pepper, to serve
  • 1/3 cup light sour cream, to serve

Method

  1. Heat oil in a large pan on medium. Add carrots, potatoes, ginger and cumin to the pan. Cook and stir for 1-2 mins, or until completely mixed together.
  2. Add 5 cups water. Bring mixture to boil. Reduce heat to low. Cover pan and leave to simmer for 20-30 mins, or until carrot is softened.
  3. Remove from heat and leave to cool for 10 minutes. Use hand blender to blend soup until completely smooth. Return to medium-low heat. Heat soup through. 
  4. Ladle soup into serving bowls. Top with cracked pepper and a dollop of sour cream. Top with optional parsley as garnish. Serve.
