Healthier apple and oat muffins

The best afternoon tea snack.

These tasty sweet treats are just what you need for a healthier and lighter option in the afternoon or around morning tea. They’re great for packing into lunch boxes and even better as after dinner snacks for those who are watching what they eat.

Not only are they incredibly easy to bake but they’re also ideal for making in bulk and freezing to enjoy throughout the week. Give these muffins a go with a spoonful of greek yoghurt and a little bit of honey to top it off. Enjoy!


  • 1 cup (150g) self-raising flour
  • 1 cup (150g) plain flour
  • 1 1/2 teaspoons baking powder
  • 3/4 cup tightly packed brown sugar
  • 1/2 cup rolled oats, plus 1 tablespoon extra
  • 1 1/2 cups (375ml) vanilla yoghurt, at room temperature
  • 2 eggs, lightly beaten
  • 100ml light olive oil
  • 1 red apple or green apple, thinly sliced


  1. Preheat oven to 180C. Line 2 x 6-cup capacity muffin pans with muffin cases.
  2. Sift flours and baking powder together in a bowl. Stir in sugar and oats. Whisk together yoghurt, eggs and oil separately. Add to flour, mix until just combined. Do not over-mix.
  3. Spoon mixture evenly into muffin pans until three-quarters full. Gently push slices of apple into mixture until completely covered and sprinkle with extra rolled oats.
  4. Bake for 25 minutes or until golden and cooked through. Cool for 5 minutes in pan. Turn out onto wire rack to cool completely. Serve.
