Super-easy garlic and basil stuffed chicken

These stuffed chicken breasts are so easy to whip up and packed full of delicious flavours. With just a handful of budget-friendly ingredients and a few moments of your time in the kitchen – you can serve up these tasty pockets full of garlic and basil to all of your hungry family and friends in no time at all.

This quick and low-maintenance chicken meal is perfect for an easy dinner or even for wrapping up and taking along to a family get-together. Serve this up with a side of creamy mashed potatoes or some delicious sautéed vegetables and enjoy!


  • 60g butter, at room temperature
  • 1 garlic clove, crushed
  • 2 tablespoons finely shredded fresh basil
  • 4 (about 200g each) chicken breast fillets
  • 25g (1/4 cup) dried (packaged) breadcrumbs
  • 1 tablespoon olive oil


  1. Preheat oven to 180C. Add butter, garlic and basil to small bowl. Stir to combine. Use small sharp knife to cut horizontal slit in the middle or the thickest part of each chicken breast. Make sure slice doesn’t go all the way through to create a pocket.
  2. Divide butter mixture into 4 equal portions. Fill each chicken breast pocket with a portion of butter mixture.
  3. Place breadcrumbs on plate. Dip chicken into breadcrumbs. Press firmly to coat. Heat oil in large frying pan over medium-high heat. Add chicken. Cook for 2-3 minutes each side or until golden. Transfer to baking tray. Bake in preheated oven for 10 minutes or until cooked through. Serve.
