Light and zesty flourless orange cake

This zesty dessert treat is the best for afternoon or morning tea treats, bringing along to get togethers, or enjoying after dinner alongside a scoop of plain vanilla ice cream. With no flour at all in this recipe, this gluten-free recipe is perfect for feeding to large groups of people as absolutely everyone can enjoy it! The syrup over the top is definitely optional, however it does help to add a whole different level to that amazing sweet and tangy flavour that holds so well in the cake. Give this unique, healthier sweet treat a go and it will easily become your number one go to baking option!


  • Melted butter, to grease
  • 2 oranges
  • 3 eggs
  • 215g (1 cup) caster sugar
  • 300g (3 cups) almond meal
  • 1 teaspoon gluten-free baking powder
  • Syrup
  • 1 orange
  • 155g (3/4 cup) caster sugar


  1. Preheat oven to 170C. Lightly grease a round 22cm (base measurement) springform pan with melted butter. Line base with non-stick baking paper.
  2. Place oranges in saucepan and cover with cold water. Bring to the boil over medium heat. Cook oranges for 15 minutes or until tender. Drain. Return to pan and cover with cold water again. Bring to the boil. Cook for 15 minutes to reduce bitterness of peel. Run over oranges with cold water. Drain. Roughly chop oranges. Remove and discard any seeds. Place orange in bowl of food processor. Process until smooth.
  3. Whisk eggs and sugar in a bowl with electric mixer until thick and pale. Gently fold in orange, almond meal and baking powder until just combined. Spoon into prepared pan. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Set aside for 15 minutes to cool.
  4. Meanwhile, use zester to remove rind from orange. Juice orange. Place rind in saucepan of boiling water. Cook for 5 minutes or until softened. Drain. Return to pan with orange juice and sugar. Cook over low heat, stirring, for 2-3 minutes or until sugar dissolves and syrup thickens.
  5. Turn cake onto serving plate. Use skewer to gently prick top. Pour syrup over the top. Slice and serve.
