Five-ingredient sweet potato and broccoli soup

If you’re looking for a nice, healthy comfort food to enjoy for dinner or lunch on a cold or rainy evening, there is nothing more filling and delicious than this soup. Not only will you fall in love with the incredible mix of flavours but you’ll be so impressed with how easy it is to whip up. It will be on the table, ready to be enjoyed in under 25 minutes while still tasting and looking absolutely gourmet. Don’t forget to serve it up with a slice of lightly buttered crusty bread and enjoy!


  • 1 brown onion, finely chopped
  • 500g broccoli, stems finely chopped, florets coarsely chopped
  • 500g gold sweet potato, peeled, finely chopped
  • 4 cups (1L) vegetable stock
  • 1/2 cup (140g) Greek-style yoghurt, to serve


  1. Heat medium saucepan over medium heat. Cook onion, broccoli stems and sweet potato, stirring, for 5 mins or until onion softens.
  2. Add stock and 2 cups of water. Bring to the boil. Reduce heat to low. Add broccoli florets. Cook for 15 mins or until sweet potato is tender. Set aside to cool.
  3. With stick blender, carefully blend soup until completely smooth. Divide among serving bowls. Place yoghurt in small bowl. Add 2 tablespoons water and stir to combine. Swirl over top of soup. Season well. Serve.
