Easy vanilla and lemon curd layer cake

There’s no stress with this recipe as all the hard parts have already been taken care of for you! For the cake base, all you have to do is invest in your favourite pre-made cake mix or you can use a simple homemade recipe that you’re already familiar with. The rest of the recipe is then truly as easy as can be. Simply mix everything together and pop in the oven. The fun part is actually constructing the work of art that is a layer cake. Invite the grandkids into the kitchen to help out and let them take full creative control over decorating with strawberries and frosting. Enjoy!

Ingredients

  • 1 pkt vanilla cake mix
  • 60g butter, softened
  • 2 eggs
    Frosting
  • 1/2 cup (125ml) milk
  • 160g butter, extra, softened
  • 1 tablespoon milk, extra
  • 1/3 cup (100g) lemon curd
  • 125g strawberries
  • 2 teaspoons lemon zest

Method

  1. Preheat oven to 160C. Grease and line 20cm round cake pan with baking paper. Beat cake mix, butter, eggs and milk in a bowl with electric mixer on low speed for 30 secs or until just combined. Increase speed to medium. Beat for 3 mins.
  2. Pour mix into prepared pan. Bake 1 hour or until skewer inserted into centre comes out clean. Set aside in pan for 10 mins to cool before turning onto a wire rack to cool completely.
  3. Add frosting from cake mix packet, extra butter and extra milk to separate bowl. Beat with electric mixer on low speed for 30 secs or until just combined. Increase speed to high and beat for 3 mins.
  4. Cut cake in half horizontally with serrated knife. Place base on serving platter. Spread half the frosting over top. Top with lemon curd and half the strawberries. Spread top of remaining cake half with remaining icing. Sprinkle with remaining blueberries and lemon zest. Place on top of the first cake. Serve.
